This Sooji Ka Halwa is a comforting classic, reimagined with Stevital for a refined-sugar-free indulgence. Warm, aromatic, and rich in texture, it delivers the same nostalgic Pakistani flavor you love, without the heaviness of traditional sugar-loaded versions. Lightly spiced with cardamom and finished with crunchy almonds, this halwa is perfect for breakfast, dessert, or special occasions when you want something sweet yet mindful.

Ingredients:

  • 300 g semolina (sooji)
  • 3 tablespoons oil
  • 1 cardamom stick (or 2 green cardamom pods, lightly crushed)
  • 40 g almonds, chopped or slivered
  • 1 glass water (warm)
  • 4 Stevital spoons (provided in the jar, adjust to taste)
  • Pinch of salt (optional)

Directions:

  1. Heat oil in a heavy-bottom pan over medium heat. Add the cardamom stick and almonds, and sauté for about 2 minutes until fragrant.
  2. Add the semolina and roast on medium-low heat, stirring continuously, until it turns golden and releases a nutty aroma.
  3. In a separate bowl, dissolve Stevital in warm water.
  4. Carefully pour the water–Stevital mixture into the roasted semolina while stirring to avoid lumps.
  5. Lower the flame and cook, stirring continuously, until the halwa thickens and reaches your desired consistency.
  6. Remove from heat and rest for 1–2 minutes before serving.
