Description:

These no-bake treats are a healthier twist on the classic Bounty Bar! Made with a creamy coconut center and coated in rich dark chocolate, they’re sweetened naturally with Stevital — making them completely free of refined sugar. Soft, chewy, and satisfying, they’re the perfect guilt-free dessert or snack for coconut lovers. Whether you're following a low-sugar lifestyle or just want a clean indulgence, these bars bring all the flavor without the sugar crash.

Ingredients:

  • 2 cups shredded unsweetened coconut
  • 1/2 cup coconut cream
  • 3 tablespoons Stevital (adjust to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 200g dark chocolate
  • 1 tablespoon coconut oil

Directions:

  1. - In a bowl, mix shredded coconut, coconut cream, Stevital, vanilla extract, and a pinch of salt until well combined. The mixture should be sticky and hold together when pressed.
  2. - Scoop out small portions and press them into classic bounty bar shapes using your hands. Place them on a lined tray.
  3. - Freeze the bars for 20–30 minutes until firm. This makes them easier to coat in chocolate.
  4. - In a double boiler or microwave, melt dark chocolate with coconut oil until smooth.
  5. - Dip each frozen coconut bar into the melted chocolate, making sure it’s fully coated. Place back on the tray.
  6. - Refrigerate for another 10–15 minutes until the chocolate sets.
  7. - Store in an airtight container in the fridge for up to a week. Perfect for after-dinner dessert or a sweet mid-day treat.
