Description:

Gajrela is a comforting, traditional dessert that blends the richness of Gajar Ka Halwa with the heartiness of rice. This lighter version is sweetened naturally with Stevital, keeping all the nostalgic flavors intact while removing refined sugar. Slow-cooked carrots, creamy milk, fragrant cardamom, and soft rice come together to create a warm, satisfying dessert that’s perfect for winter evenings or festive gatherings, without the guilt.

Ingredients:

  • 2 kg carrots, peeled and finely grated
  • 2 tablespoons oil
  • 2 green cardamom pods, lightly crushed
  • 1 glass full-cream milk
  • 1 cup boiled rice (soft and slightly mashed)
  • 2 Stevital spoons  (provided in the jar, adjust to taste)
  • 30 g almonds, chopped or slivered
  • Pinch of salt (optional)

Directions:

  1. Heat oil in a heavy-bottom pan over medium heat. Add the crushed cardamom pods and cook until aromatic.
  2. Add the grated carrots and sauté for 10–12 minutes until they soften and turn translucent.
  3. Add the boiled rice and mix well, gently breaking it into the carrots. Cook for 5 minutes.
  4. Pour in the milk and cook on medium-low heat for 10–15 minutes, stirring frequently until the mixture thickens.
  5. Add Stevital and a pinch of salt (if using). Mix thoroughly and cook for another 5 minutes.
  6. Once the gajrela reaches a rich, cohesive consistency, remove from heat.
  7. Garnish with chopped almonds and serve warm.
