This classic winter favorite gets a healthier makeover with Stevital. Rich, aromatic, and deeply comforting, this Gajar Ka Halwa is naturally sweetened without any refined sugar, allowing the natural sweetness of carrots to shine through. Slow-cooked with milk, cardamom, and crunchy nuts, it delivers all the traditional flavor you love, without the heaviness. Perfect as a guilt-free dessert or a warm, nourishing treat during cooler days.  

Ingredients:

  • 2 kg carrots, peeled and finely grated
  • 2 tablespoons oil
  • 2 green cardamom pods, lightly crushed
  • 1 glass full-cream milk
  • 2 Stevital Stevia* spoons (provided in the jar)
  • 30 g mixed nuts (almonds, pistachios, cashews), chopped
  • Pinch of salt (optional)

Directions:

  1. Heat oil in a heavy-bottom pan over medium heat. Add the crushed cardamom pods and cook until aromatic and you hear a light crackling.
  2. Add the grated carrots and sauté for 10–12 minutes, stirring frequently, until they soften and turn slightly translucent.
  3. Pour in the milk and mix well. Cook on medium-low heat for another 10–15 minutes, allowing the milk to reduce and coat the carrots evenly.
  4. Add Stevital and a pinch of salt (if using). Mix thoroughly and cook for 5 more minutes, stirring continuously to prevent sticking.
  5. Once the halwa reaches a rich, thick consistency, remove from heat.
